In the sunburnt vineyards of Australia, great wine isn't made, it's conjured. The Wizard of Aus celebrates the growers who work a little magic in tough conditions to bring the best out of every grape.

What it tastes like

Bright and sun-soaked, with ripe peach and citrus zest up front and a gentle creamy edge through the middle. The finish is clean and fresh rather than heavy. This is unoaked Chardonnay, so none of the butter and vanilla that puts people off the style. If you have written Chardonnay off before, this is the one to change your mind.

Why it's lighter

Fermented fully dry, which converts the grape sugar into alcohol rather than leaving it in the bottle. That is what brings the calories down while keeping the wine at proper drinking strength. Nothing removed afterwards, nothing watered down.

How to drink it

Serve well chilled, around 8°C. Good with roast chicken, grilled white fish, creamy pasta or a cheese board. It also holds up on its own on a warm evening, which is more than most Chardonnay manages.
