Tasting Notes
TRACES Sauvignon Blanc has classic grassy and herbaceous notes with a clean and crisp finish. This Sauvignon Blanc is wonderfully versatile and pairs well with a variety of dishes. It’s a perfect match for superfood salads. We also highly recommend serving TRACES Sauvignon Blanc with grilled fish, where its zesty character highlights the natural sweetness of the seafood.
The Winemaking Process
We are always asked what makes this wine sugar-free but still taste so good. There are a few factors. Firstly, the grapes are picked very early in the morning when the temperature is cooler which helps reduce the sugar volume found in them. Then, through fermentation, all residual sugar is removed. We age the wines on lees for 5 months to provide structure and complexity. On the Sauvignon Blanc specifically, we move the lees several times with batonnage to improve flavour, aroma and texture. Nothing artificial has been used throughout the whole process without any animal products either.

TRACES is made in the South of France, in vineyards between Bezier and Montpelier, in the Languedoc Roussillon area. The vineyards are High Environmental Value (HVE) certified, meaning they are managed in a sustainable process. Being a part of the HVE scheme allows us to identify and promote environmentally friendly practices during the winemaking process. These delicious grapes are harvested early in the morning to reduce the sugar volume found in them, and through fermentation, all residual sugar is removed.
