TRACES is a range of naturally crafted wines produced in the South of France — Sauvignon Blanc and Rosé Light. Both are 11% ABV, 0g of sugar per serving, produced in the Côtes de Thongue appellation. Since launching in 2022, TRACES has won multiple industry awards, sold out on multiple occasions, and topped Amazon's bestseller list in wine.
How is TRACES wine made?
The grapes are harvested 10 days before the main regional harvest, in the early morning. Early harvesting naturally reduces the sugar concentration in the grapes. The wine is then fermented at a cool 15–16°C for two weeks using cultured yeasts specifically selected to ensure all fermentable sugar is fully converted into alcohol. The wine is aged on lees for five months with periodic bâtonnage on the Sauvignon Blanc. The result: 11% ABV, 78 calories per 125ml, 0g of sugar — not because anything has been removed, but because there was none left after full fermentation.
