Vinification
The grapes were hand harvested into bins in the cool of the morning. They were then whole-bunch pressed and only free-run 1uice was used for the final blend. A selected yeast strain was used for primary fermentation. 10% portion of the Chardonnay was allowed to undergo malolactic fermentation. The wine was blended and bottled, and underwent a secondary fermentation in the bottle. This was followed by bottle maturation of approximately BO months. Only then was it disgorged, corked and labelled.

Tasting Note
This pale blush Cap Classique shows prominent aromas of red berries, flambéed plum
and pomegranate with undertones of oyster shell on the nose. The palate is seductively fresh and persistent with a lingering afertaste of honey cake and sliced grapefruit. The
mousse is fine and soz, leaving the taste buds with a tantalized sensation.
